Mediterranean Chicken and Pasta by The Potpourri House

(KLTV/KTRE) - Les Ellsworth, owner of the Potpourri House, a longtime Tyler favorite, brings us a new recipe today that you'll want to try out in your own kitchen very soon!

Mediterranean Chicken Marinate Chicken breast in olive oil and Greek seasoning for approx an hour and grill or saute. If time prohibits pick up a rotisserie chicken at the grocery store. Dice to bite size pieces and reserve to put in at the end. 1 1/4 cup of artichokes quarter 1/4 cup of black olives sliced 1 tablespoon of capers 1/4 cup of sun-dried tomatoes julienne cut 1 1/2 cup of olive oil 2 Tablespoons of finely diced fresh basil tablespoon of fresh minced garlic 1 tablespoon of Greek seasoning top with 4 tablespoons of Parmesan cheese In Olive oil place the first 4 ingredients and bring to a slow simmer. At the end place garlic, basil and Greek seasoning and top with Parmesan cheese. For a low fat and nearly zero point version- if you are following weight watchers- substitute 2 cups of a good chicken broth for the olive oil and thicken with cornstarch and water.

Cook enough pasta for family of 4 drain and toss with above ingredients. Serve immediately.
