4 large sweet potatoes, cooked until just done
1 ½ pounds Yukon gold potatoes, cooked until just done

*Do not overcook potatoes!!
**Chill potatoes overnight. Peel and dice potatoes on the next day.

1 large red onion, sliced thin
2 teaspoons salt
1 clove garlic, minced
1 jalapeno pepper, seeded & minced
¼ cup fresh lemon juice
1 cup mayonnaise
1 Tablespoon curry powder
¼ fresh parsley, finely chopped
¼ teaspoon white pepper

Mix all ingredients with potatoes. Chill before serving.
