
Grant's Blackened Fish Sandwich:
Mahi Mahi (or any other white fish filet)
Aioli Dressing (Recipe Here)
Sliced tomato
Green leaf lettuce
Olive oil
Butter
Blackening seasoning
Hamburger buns
Sliced pepper jack cheese
In a microwavable bowl, take a half stick of butter and melt. Add ½ cup of olive oil to the melted butter along with two tablespoons of blackening seasoning. Blend until smooth. Take your Fish fillet and dip both sides into the mixture. Place the fish in a hot skillet over medium high heat. Cook about 3 minutes on each side or until done, depends on the thickness of your fillet.
Take your bun and spread aioli dressing on both sides. Place leaf lettuce and tomato followed by the fish and then top with sliced pepper jack cheese.
