Cooking Up A Storm Grant's Cajun Omelet

Grant's Cajun Omelet:


Sliced Tomatoes

Diced Onion

Diced Green Peppers

Diced Tomatoes

Bacon Bits

Tasso Ham



Blackening Seasoning



Shredded Pepper Jack Cheese

In a skillet sauté your onions, peppers, tomatoes, and mushrooms over medium high heat with butter and blackening seasoning.  While this is cooking take three eggs and a slash of water and blend until smooth.  Add your egg mixture to you sautéed vegetables and cook for about 4 minutes.  Then place your skillet in your oven on broil to cook the top half of your omelet.  This should take about 1 minute.  Take out of the oven and place pepper jack cheese across the top and place back in the oven for 30 seconds to melt the cheese.


Serve with chives and enjoy!
