Janie's Cakes Chocolate Covered Cake Balls

 Janie's Fun-to-Make Chocolate Covered Cake Balls

This is a great spring recipe for using up cake scraps. This is fun for the kids and doesn't require much baking or cooking.

3 c. cake crumbles

½ c. cake icing

2 tbs + 2 tsp Crisco Shortening

14 oz of your favorite bar chocolate

Double boiler

Candy thermometer

Cookie Sheet

Wax paper

Take any cake and icing (preferably from Janie's Cakes). Crumble cake, add icing and roll into one inch balls. Place on wax paper on cookie sheet and chill in the refrigerator.

While the balls are chilling melt chocolate and shortening over a double boiler on low temperature setting. Chocolate should melt but not exceed 95 degrees. Use a candy thermometer.

Once chocolate is completely melted remove from heat and allow chocolate to cool to 80-85 degrees (81 is optimum). Using a spoon dip cake balls one at a time into chocolate completely submersing each ball. Place chocolate covered cake ball back on the wax papered cookie sheet. When all of the balls have been covered place them in the refrigerator to allow the chocolate to harden. Enjoy!
