Cream cheese lemon squares

 

1 box yellow cake mix
3 eggs
1 stick butter, melted
2 c powdered sugar
1 8-ounce package cream cheese, softened
¼ c sour cream
1 T grated lemon peel
1 tsp vanilla extract
¼ tsp fresh lemon juice

Combine cake mix, 1 egg and butter. Pour mixture into 13 x 9 x 2-inch glass baking dish. Beat together sugar, cream cheese and sour cream. Mix in remaining eggs, lemon peel, vanilla, and lemon juice. Spread cheese mixture evenly over crust. Bake at 350°F for 30 minutes until topping sets. Cool in pan on rack. Refrigerate until very cold, at least 3 hours. Cut into squares.
