
Chef Tim Holbert's Chunky Ranch Potatoes
• 3 lbs medium red potatoes, diced
• 1 cup butter
• 1 (16 oz.) bottle - ranch dressing
• Half cup shredded parmesan cheese
• Quarter cup bacon (optional)
• Quarter cup chives, minced
• Tablespoon paprika (optional)
Preheat oven to 425 degrees. Place potatoes in gallon-sized storage bag. Mix butter and ranch dressing. Shake well. Place coated potatoes into 9x13 casserole dish. Bake 50 minutes. Place hot potatoes in large mixing bowl. Fold in cheese, chives, etc.
