In a skillet lightly sauté your mushroom caps until lightly brown. Set aside once done. Next take one Roma tomato, one green pepper, and on bunch of green onions and dice ¼" in size. Sauté until green peppers are tender, about 6 to 8 minutes. Once done add I cup of bacon bits and continue cooking for an additional 2 minutes. Place this mixture in a mixing bowl and add one cup of mayonnaise and 4zo of shredded mozzarella cheese.
Blend until well mixed and them place on the mushroom caps. Sprinkle your stuffed mushrooms with shredded parmesan cheese and bake in a 350 degree oven for 20 minutes.
