Grant's Chipotle Garlic Quesadilla

Chipotle Garlic Dip Mix from Sweet Gourmet.

Jalapeño cheddar flour tortilla (large)

Mixed pepper jack cheese blend

Chicken breast

Olive oil

Green pepper

Onion

Take your chicken breast and coat with olive oil and sprinkle the chipotle garlic dip mix from Sweet Gourmet.  Sear your chicken over medium high heat until done.  Once done dice your chicken into small bite size pieces.  In another skittle sauté your sliced pepper and onion for about 8 minutes over medium high heat. 

On a hot plate place your tortilla down and cover with cheese.  As the cheese begins to melt cover half of the tortilla with chicken peppers and onions.  Fold in half then place on a cutting board, cut into four pieces, and serve with lettuce, sour cream, guacamole, and Pico de Gallo.  To kick it up a notch sever with Prairie Creek Salsa from Sweet Gourmet.
