Collin Street Bakery was founded in Corsicana, Texas by local businessman and entrepreneur Tom McElwee and immigrant German baker August Wiedman in 1896. John Ringling and his Ringling Brothers Circus troupe are credited with making the bakery's Deluxe Fruitcake famous, by taking the cakes with them when they traveled abroad. The fruitcakes are still made from the original recipe and are shipped to every state in the union and 196 foreign lands.

The McNutt family bought the business in the 1940's and it is still a family owned business into the third generation.

The new location on Interstate 20 in Lindale is only the second Collin Street Bakery to be built outside of Corsicana. Opening in December of 2011, it is already a huge success with its' various baked goods and lunch offerings. During the Holiday Season, business escalates tenfold.
