Ingredients:
3 whole eggs
2 tbsp ham
1 tbsp onion
2 tbsp green pepper
3 tbsp tomato
1 tsp green onions
¼ cup shredded pepper jack cheese
1 ½ oz salsa or green chili
Bacon or sausage
1 English muffin
Preparation:
Dice ham, onion, green pepper, tomato
and green onion
Beat eggs with a whisk
Add eggs, ham, onion, green pepper and 2
tbsp tomatoes to a hot, lightly oiled 10'' pan
Cook until eggs are semi-firm
Top with cheese
