Pepper Jack Cheese Grit Cakes
Shredded Pepper jack Cheese
Prepare according to instructions 4 servings of Grits. One the grits are cooked add 8oz of shredded pepper jack cheese and mix well. Next add one bunch of green onions thinly sliced and 1 cup of bacon bits. Mix until smooth. Take a cooking sheet and coat with vegetable oil. Spread your grits over the sheet evenly and cool in the refrigerator for at least one hour (let grits reach room temperature before placing in the refrigerator or else the temperatures in your refrigerator will rise significantly). Once cooled cut the grits into 9 to 12 squares and then diagonally cut each square to make a triangle grit cakes. Dredge the grit cake in flour and in a large skillet pan fry in vegetable oil until golden brown. Serve with salsa or eggs.
