Ingredients. Boneless quail. Ricotta cheese. Prosciutto ham. Red pepper flakes. Olive oil. Mozzarella cheese. Salt and pepper. Spinach. Garlic. Onions. Italian parsley.
Place the ricotta cheese and a bowl and add the spinach. Then add the mozzarella cheese with a pinch of salt and pepper and red pepper flakes.
Take the boneless quail and lay it on a table stuff the quail with the ingredients in the bowl. Wrap the stuff Quail with one thin slice of prosciutto ham.
Once the ham is wrapped around the Quail place in the refrigerator to rest for two hours. In a medium saucepan over medium heat add olive oil and the quail.
Brown the quail on both sides and place it in a 300° oven. For 10 minute. Remove the Quail from the oven and add 2 tablespoons of butter to the saucepan. Then add garlic parsley and shallots to the Quail and butter mixture.
The glaze the pan with a little white wine and place the quail on a plate and pour the sauce over the quail and serve.
At the Zazas we serve it over creamy polenta with green beans but you can serve it over rice or whatever you would like. Buon Appetito
