
Grant's BBQ Pulled Pork Enchiladas
Pork loin roast (about 3 pounds)
Cumin
Garlic salt
One diced onion
One large can diced green chilies
Flour tortillas
Shredded Monterey jack cheese
Coat one side of your pork roast with cumin and garlic salt and placed seasoned side down in a crock pot. Next pour your BBQ sauce over the roast and crock pot to low and cook for about 10 hours. Once fork tender break the pork apart and mix until blended well.
In a skillet over medium high heat sauté your diced onion for about 8 minutes and then add your green chilies and pork roast. Mix well. Place about 4oz of pork mixture in a flour tortilla with about 2oz of cheese. Wrap and repeat this until you have enough to fill a baking dish. Cover the enchiladas with cheese and bake in a 350 degree oven for 10 minutes until the cheese has melted.
