"Real Good" Potato Soup

5 large potatoes
1/4 cup butter
1/2 cup flour
7 cups milk
1 bunch green onions,chopped
1  1/2 cup cheddar cheese,shredded
1 cup sour cream
salt  & pepper to taste

Peel  potatoes & chop into small pieces. Melt butter in large pot and slowly stir in flour. Whisk milk
and bring to almost boiling over med heat. Add potatoes and green onions, stir in cheese and sour cream. Heat throughly until cheese is melted and soup is warm.

Garnish with chopped green onions and crumbled bacon if desired.
