Potpourri House's SESAME TORTILLA ENCRUSTED CHICKEN - Gluten-free
6 oz chicken Breast preferably fresh marinated in Sherry Wine 2 hours (or overnight)
Melted butter to coat chicken
3 oz of "Food Should Taste Good" brand Multigrain Tortilla Sesame chips coarsely ground (found at Sam's)
2 oz Orgran gluten-free rice crumbs
4 oz of a good Shredded Parmesan cheese
Method:
Marinate chicken and then lightly coat with butter
Combine final 3 ingredients in a bowl and coat chicken with breading
Bake at 350 for 23 minutes or until done
