Farmers market skillet hash by Carmen Sosa

Carmen Sosa, founder of East Texas Community Food Coalition, joined Mama Steph to share her recipe for this simple yet completely flavorful skillet hash, made with ingredients she bought at a local farmers market.

Farmers Market Skillet Hash

3-4 slices bacon, chopped

1 onion, diced

1 pound baby red potatoes

1 pound mixed saute greens (chard, kale mustard, turnip, etc.)

sea salt

coarse ground pepper

Steam potatoes in a basket over boiling water, covered, for about 10 minutes, then chop into halves or quarters

Cook chopped bacon until very done, which allows all the fat to render from the meat

Toss onion and potatoes into bacon pan, and cook for about 10 minutes.

Sliver greens, then toss into potatoe mixture, and cook, stirring occasionally, for about ten minutes.

Season with salt and pepper.

Serve with warm cornbread or scrambled organic eggs.
