Heart-healthy basil potato salad

Basil Potato Salad Recipe

1/2 pound of purple potatoes (about 8 small ones)
8 Medium red potatoes, scrubbed
1/4 C apple cider vinegar
1/4 C. Extra Virgin Olive Oil
1/2-1 tsp of dry mustard
Lots of freshly ground black pepper
1 tsp sea salt
2 large cloves of garlic, minced
Pinch of red pepper flakes
Small handful of torn basil leaves
Crumbled bacon, optional

Boil potatoes until slightly tender...and drain. (recipe called for the potatoes to be peeled, I left the peel on) You can slice, dice or chunk the potatoes when cool enough to handle.
Mix up the dressing ingredients which is:
The apple cider vinegar, the extra virgin olive oil, pepper, sea salt, dry mustard, garlic, red pepper flakes. Mix well then pour over the potatoes. Lastly toss in the torn basil leaves. You may serve this hot or cold.....I served mine cold because I cooked the potatoes a day ahead of time and refrigerated them. I also added a bit of diced onion, and some chopped up boiled egg. :) I think I will try it hot next time....I bet the flavor of the basil would be more pronounced if the potatoes were hot! Enjoy! :)
