Here's a light , quick, and easy recipe for a reallygood appetizer that you can enjoy with your favorite cold beverage, on theporch or beside the pool with your friends, on a nice summer night. Besidesthat, spinach is a super food! Spinach has more vitamin C than oranges, morevitamin D than milk, and more iron than liver! Spinach is fat free and high infiber, while low in calories and carbs. No wonder it was POPEYE'S choice!
QUICK AND EASY SPINACH AND ARTICHOKE DIP
One small (10oz) package frozen (thawed) chopped leafspinach
One small (8oz) package cream cheese (room temp or usewhipped}
One cup mayonnaise (8oz)
One small can quartered artichoke hearts (well drained}
One teaspoon garlic powder
One teaspoon crushed red pepper flakes
One teaspoon ground black pepper
Squeeze out as much liquid from spinach and artichoke. In alarge bowl, mix vegetables and all other ingredients. Thoroughly combine. Youcan eat this cold or spoon into shallow baking dish, sprinkle with shreddedparmesan and bake at 350 until cheese melts and begins to slightly brown. Servewith your favorite tortillas chips, pita chips, or garlic toast points.
