Chewy pumpkin-chocolate chip oatmeal bars

Food blogger Sally from Sally's Baking Addiction has a fall treat that I love and thought I'd share with you. It's full of oats, pumpkin and chocolate chips; for a sweet treat, it's pretty healthy!

Pumpkin-chocolate chip oatmeal bars

  • 2.5 cups old-fashioned rolled oats (not instant or quick oats)
  • 1/4 cup plain flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice (or 1/4 tsp nutmeg + 1/4 tsp ground cloves)
  • 1 tsp vanilla extract
  • 3/4 cup pure pumpkin
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup molasses
  • 1/2 cup mini chocolate chips
  1. Preheat oven to 350F degrees. Spray 8 x 8 pan with cooking spray or line with parchment paper, or line with foil and spray foil for easy removal after baking and cooling. Set aside.
  2. Mix together all dry ingredients. Add in the vanilla, pumpkin, milk, egg, and molasses. Mix together until evenly combined. Gently fold in mini chocolate chips.
  3. Pour mixture into the pan and bake for 20-25 minutes. Allow to cool and cut into bars.
