Breakfast Enchiladas

1lb turkey sausage

2 cups shredded Colby jack cheese

8 (8 in) flour tortillas

6 eggs

2 Tbsp all-purpose flour

2 cups of half and half

3 oz of real bacon bits

1 cup of Pico de Gallo

1 tsp cumin

1 tsp garlic powder

Cook the turkey sausage in a skillet over medium high heat. Once cooked stir together the sausage, 1 cup of the cheese, 1 cup of Pico de Gallo, and half of the bacon bits. Divide up the mixture and roll in 8 flour tortillas.

In another bowl beat the eggs, cumin, garlic powder, and flour. Mix in the half-and-half and pour over the tortillas in the pan. Pour the egg mixture over the pan of wrapped tortillas and bake in a 350 degree oven for 30 minutes covered. Uncover and cook for an additional 10 minutes or until all the egg mixture is done.
