Here's a healthy snack you can make in a flash, and it's fun to do with kids, too! Save this one for use this summer when they're home and hungry all. the. time.
Mini-ricotta and fruit pizzas
6 small flour tortillas
1 1/2 cups lowfat ricotta cheese
four cups fruit (berries, banana slices, mango slices, etc.)
all-fruit spread (like Polaner or other brands)
Place tortillas on non-stick cookie sheet, and spread with about a tablespoon of fruit spread. Bake ten minutes at 350 degrees.
Cool tortillas completely, and then spread each with about 1/4 cup softened ricotta.
Arrange fruit pieces (if strawberries are large, cut into slices) on top of ricotta.
Cut each pizza in half or into triangles, and enjoy!
