Mrs Baird’s Apple and Walnut Crisp

Mrs Baird’s Apple and Walnut Crisp

 

Serves 8

 

4 gala apples, peeled, cored and thinly sliced

3 tablespoons light brown sugar

2 tablespoons orange juice frozen concentrate, thawed

1 teaspoon lemon zest (grated lemon peel)

1 tablespoon lemon juice

1 tablespoon flour

1/2 teaspoon cinnamon

2 slices Mrs Baird's Potato Bread, torn into pieces

1/4 cup walnuts

1/4 cup dried cherries

1 tablespoon butter

2 tablespoons light brown sugar

1/2 teaspoon cinnamon

 

Preheat oven to 375° F. Place apple slices, 3 tablespoons light brown sugar, orange juice frozen concentrate, lemon zest, lemon juice, flour, and 1/2 teaspoon cinnamon in a nonstick 8-inch square baking pan and stir until ingredients are evenly distributed. Place Mrs Baird's Potato Bread in a food processor and process for 5 to 10 seconds to form soft bread crumbs. Add walnuts, dried cherries, butter, 2 tablespoons light brown sugar, and 1/2 cinnamon to food processor, and process for 1 to 2 seconds to combine. Sprinkle mixture evenly over apple slices and bake, uncovered, for 30 minutes, or until apples are tender and bread crumb mixture is golden brown and toasted.
