In The Kitchen: Sirloin Salad With Dried Cranberries & Honey Pineapple Burgers

Sirloin Salad With Dried Cranberries
Ingredients:

pan broil 1 pound beef top sirloin steak, cut 1-inch thick
2 tsp. Coarse ground black pepper
1 tsp. Coarse salt
2 medium heads Boston lettuce
1/2 cup blue cheese, crumbled
1/2 cup dried cranberries
1/2 cup pine nuts, toasted
2 tbsp. Orange juice
2 tbsp. Red wine vinegar
1 tbsp. Olive oil
2 tsp. Honey
1-1/4 tsp. Dijon mustard

Method:
1. Rub steak with salt and pepper. Grill over medium coals 14-15 minutes for medium rare. Or oven broil on rack of broiler pan so surface of beef is 3-4" from heat for 1" steaks.
Broil 16 to 21 minutes for medium rare to medium doneness.
2. Meanwhile, tear lettuce into bite-sized pieces and place in large bowl or platter. Sprinkle with blue cheese, berries and nuts.
3. Prepare dressing by whisking together orange juice, red wine vinegar, olive oil, honey and mustard until slightly thickened.
4. Carve steak at an angle across the grain into 1/4-inch thick slices, cut 2-inches long. Drizzle with dressing and serve.

Honey Pineapple Burgers
Ingredients:
pan broil or oven broil for burger patties:
1 pound lean ground beef
tsp. Onion powder
2 tbsp. Teriyaki
2 tbsp. Honey
cup crushed pineapple, drained
tsp. Salt
tsp. Pepper
4 kaiser rolls

Basting Sauce:
1/3 crushed pineapple, with juice
3 tbsp. Honey
1/8 tsp. Red pepper

Method:
1. Combine ingredients in microwave-safe glass bowl. Heat in microwave for 1 minutes, until mixture is warm. Hold and use for basting during last few minutes of cooking burgers.
2. Burgers in medium bowl, combine all ingredients mixing lightly but thoroughly. Shape into 4 patties.
3. Broil burger patties on rack of broiler pan so surface of beef is 2-3 inches from heat for inch thick patties. Broil for 10-13 minutes, or until internal temperature reaches 160 degrees. Or, pan broil patties in a non-stick skillet. Pan broil inch thick patties over medium heat for approximately 9 to 10 minutes, or until internal temperature reaches 160 degrees.
4. During last few minutes of cooking, spoon honey pineapple sauce over patties. You may also top cooked patties with basting sauce when being served. Serve on kaiser rolls.
