Shrimp ceviche, Villa Montez-style


If you want a stunning and delicious appetizer for your next get-together, try Mundo Villapudua's special shrimp ceviche, made Villa Montez style!
Villa Montez Shrimp Ceviche

One doz 16/20 count shrimp
1 tomato
1/2 medium onion
3 oz of cubed pineapple
2 oz red bell pepper, finely diced
3-4 pinches of finely chopped cilantro
Crushed red pepper
4 oz of jelly
2 lemons
4 limes
2 tablespoons olive oil

Devein all shrimp and slice in half, then cube.

Juice the lemons and limes, then soak the shrimp in the juice for 20-30 minutes.
Add all ingredients in a bowl, stir well, add salt, pepper to taste and add a pinch or two of crushed red pepper.
Add 2 tablespoons of olive oil for one last stir..
Serves 6.
