Texas Shaved Ice inside the Lufkin Mall: 20 demerits for not keeping windows closed when not in use, whipping cloths should be stored, clean and dry in sanitizing solution, utensils should be stored in the same direction, clean ice machine on back counter, personal drinks/items must be stored away from food, need to clean floors, all containers must have labels, soap and paper towels needed at sink, thermometers needed in all coolers and freezers, employees must wash hands between tasks, food handler cards must be on site and a Certified Food Manager must be on site at all times. A follow up will be made in the next week.

Sno Depot #1 at 307 N. Timberland: 19 demerits wiping cloths should be stored clean and dry or in a sanitizing solution, weather striping needed on door, repair light shield, store all utensils in the same direction, clean under sink, repair leak under sink, all containers must be labeled, employees must wash hands before putting on gloves, cream must be held at 41 degrees or below, paper towels needed at hand washing sink, keep windows closed when not in use, hair restraints must be used at all times, chemical test strips needed for sanitizer solution and Food Manager required on site. A follow up will be made in a week.

Pizza Hut at 4505 S. Medford: 14 demerits for holding area not above 135 degrees (food voluntarily thrown out), holding area must be below 41 degrees, hot water needed at hand sink (work order placed), repair restroom (work order placed), do not leave windows open when not in use, repair damaged back-up lights above sink, all single service items should be stored at least 6 feet off of the ground, repair leak at hand sinks and several food handler cards needed. A follow up will be done in next 30 days.

Fiesta Mexicana at 206 S. Timberland: 13 demerits for mop sink required, needs weather proofing in kitchen area, must utilize time stamps for food that will be left out of temperature controlled areas, thermometers needed in all coolers and freezers, label and date all food in walk-in cooler, do not stack food containers without lids (food voluntarily thrown out) and all employees must have food handler cards. Will follow up in 30 days.

Texas Shaved Ice at 151 Mt. Carmel Rd in Hudson:  11 demerits for thermometer needed in all coolers and freezers, cooler must be 41 degrees or below, wiping cloths should be stored clean and dry or in sanitizing solution, repair/replace floor tiles, store utensils in the same direction, label all containers, Food Manager required on site at all times. Will follow up in 1 week.

Beat the Heat Snow Cones at 501 S. timberland: 5 demerits for wiping cloths should be stored clean and dry or in sanitizing solution, all containers should be labeled and hot water needed at all times in hand washing sink.

IHOP at 4400 S. Medford: 3 demerits for holding area must 41 degrees or lower.
