Chef Ben Carter, owner of Buttermilk's in downtown Canton, shared a fresh, delicious salad with a little kick and a lot of flavor! We'll take this all summer long!
Cilantro Lime Dressing
I Jalapeno seeded
1 Clove Garlic
¾ Tsp minced fresh ginger
¼ cup lime juice
1/3 cup honey
Pinch of salt
½ cup extra-virgin olive oil
2 tsp balsamic vinegar
¼ cup fresh cilantro
In a blender, combine all ingredients except olive oil. After everything is blended to a smooth consistency, slowly add olive oil and blend until incorporated. Refrigerate and serve as needed.
Chopped Corn & Black Bean Salad
This is an awesome salad all by itself or as a compliment to fish tacos, grilled chicken, or even a burger. Finish with Cilantro lime dressing and enjoy!!!
2 heads Romaine Lettuce, chopped
2 tsp Red and green bell pepper, chopped
Minced red onion
Black beans rinsed
Whole kernel corn, rinsed
Salt and Pepper to taste
Mix together olive oil, cumin, and chili powder. Set aside
Toss in large bowl the onion, tomato, bell peppers, black beans and corn.
Now sprinkle the oil mix on top of the salad and toss around. Pour on the Cilantro Lime Dressing and enjoy!
