During the summer we have a number of delicious juicy berries available to enjoy. One way to do this is to make a red, white and blue slab pie, which looks patriotic enough to enjoy on Memorial Day, Independence Day, or any day!
Summer berry slab pie by Mama Steph
2 premade refrigerated pie crusts, at room temperature for 10 minutes
6 cups fresh red and blue berries (strawberries (sliced), blueberries, blackberries, raspberries, etc.)
1 cup strawberry glaze
16 ounces lowfat cream cheese
2/3 cup sugar
1 TBS milk
1/2 tsp vanilla extract
1. Lay the two pie crusts atop each other, then roll out so that they will fit into your rectangular baking sheet. Bake at 450 degrees for 10 minutes. Cool completely.
2. Combine cream cheese, vanilla, sugar, and milk in a mixing bowl. Use a mixer to whip the mixture together. Spread creamy mixture over cooled pie crust, and then refrigerate for about an hour.
3. In another mixing bowl, combine berries and a cup of the strawberry glaze. Spread berry mixture over the cream cheese spread.
4. If desired, use whipped cream can to dot the top of the pie in any pattern you like.
