This lovely pie is also cold and refreshing, and so easy to make! The most difficult part is waiting for the gelatin to cool off before adding to the pie mixture.
Now that's pretty easy. Give it a try on a hot summer day!
Watermelon-lime no-bake pie by Mama Steph
2 cups watermelon with seeds removed, cubed
3-ounce package of lime gelatin mix
1/4 cup boiling water
12 ounces non-dairy whipped topping, thawed
9-inch graham cracker crust
1. Dissolve gelatin into boiling water in a large bowl. Allow to cool to about room temperature.
2. Add whipped topping to the cooled gelatin mixture, whisking to combine.
3. Gently fold watermelon cubes into the mixture, then spoon all into the crust.
4. Refrigerate for at least 3-4 hours until set, or put in freezer until set, if in a hurry.
