Sometimes on a hot summer evening, there's nothing like a cool salad for dinner....it can be the perfect thing! This one is simple and easy to prepare, but full of delicious flavors that are reminiscent of the perfect BLT sandwich!
BLT salad with toasted French bread croutons by Mama Steph
1/2 loaf crusty French bread, sliced
mixed greens (lettuce, spinach, etc.)
tomatoes (chopped if large, sliced in half in grape or cherry tomatoes)
4 slices bacon, pan fried, drained and crumbled
4 ounces white cheese, like fresh mozzarella, provolone, Swiss, Gouda, or chevre
Ranch dressing (made with seasoning packet, Dukes mayonnaise, and milk)
1. Preheat oven to 250. Place sliced bread on a baking sheet, and brush with olive oil. Sprinkle with garlic powder. Toast in the 250 oven until crisp, but don't allow to get dark. When cool, chop into 1" cubes. Set aside.
2. Combine greens and tomatoes; toss. drizzle with the dressing and toss well again.
3. Sprinkle salad with bacon pieces, cheese, and toasted croutons, as well as salt and pepper, if desired.
Pairs well with smoked or grilled chicken!
