Nacogdoches family hoping their beef jerky recipe will win big in HEB contest

NACOGDOCHES, TX (KTRE) -

A Nacogdoches family is preparing their pitch about a beef jerky theyve been making for years in hopes of winning a large cash prize and the opportunity to see their product on HEB shelves.

Blank & Sons told East Texas News the jerky will speak for itself once judges have a chance to chew on it for a while.

Blank & Sons Jerky is setting the state on fire having already beat out 500 entries as finalists in HEB's contest for discovering new and innovative products. There's nothing new about jerky, except the taste of Blank & Sons bold flavors.

"Our beef jerky has a real deep depth of flavor,” said Damon Blank, the owner of Blank & Sons. “You can chew on it a good length of time and still get flavor."

The recipe was perfected in an East Texas cabin.

"Marinating, slicing the meat, prep time, all that and then you only come out with about a 45-percent yield,” said Danton Blank, Blank & Sons marketing and graphic artist.

That’s not enough jerky to support current online sales, vendor fairs, and selected retail markets.

"So what we did, we found a co-packer and theyre able to do about 200 pounds in 8 hours,” Danton Blank said.

Another expansion could be in the near future if judges like what they hear and taste next week in Houston.

"Nine times out of 10, if they taste it, theyll buy it,” Damon Blank said.

The winners share $70,000 in cash prizes and a chance to sell their product in HEB stores.

Like a good mom and boss, Tammy Blank gives her sons a lot of the credit for the company’s success.
"theyre really creative and energetic, and they keep Damon and I moving forward on new ideas,” said Tammy Blank.

Those ideas might be needed sooner than later. Damon says even if they' don't win, being in the top 25 is a feather in his hat.  

On August 10 and 11 at the Houston Food Bank, the 25 final contestants will present their creations to a panel of expert judges, who will select four winners based on quality, marketability, and readiness for production.
