Mango and curried chicken salad by The Potpourri House

A great recipe for lunch or dinner, or anytime you need a high-protein, delicious snack! 

Mango and Curried Chicken Salad
2 lbs of Chicken breast
Salt and pepper to taste
1 1/2 cup of Mayonnaise
1/3 cup of dry white wine
1/4 cup of Fischer and Wieser Mango Ginger Habanero Sauce
3 tablespoons curry powder
1 cup of Medium diced celery (2 large stalks)
1/4 cup of green onions white and green parts
1/4 cup of raisins
1 cup of sliced almonds roasted

Preheat oven to 350
Place chicken breast on sheet pan with water and cook for 35 minutes until
done- set aside and cool
Diced chicken into bite size pieces
For Dressing, combine the mayonnaise, wine, mango sauce, curry powder and
salt and pepper into a bowl and whisk tell smooth
Combine Chicken, and above ingredients mix well. This is a recipe that can
be done the day before a party to allow flavors to blend.
