Foil-packet dinners are so great, especially on the weekend when your number one goal is to relax! You simply wrap your ingredients in a foil packet, bake or grill, and unwrap your delicious dinner 25 minutes later! And clean up couldn't be easier....just toss the foil and you're done. Les Ellsworth, owner of the Potpourri House Restaurant and Boutique in Tyler, showed us how it's done.
Tilapia with Fresh Vegetable Foil pocket
5 grape or Cherry tomatoes cut in half 4 or 5 slices of zucchini squash 4 slices of lemon Tilapia filet season with Cajun seasoning Shredded carrots 3 tablespoons of white wine 3 tablespoons of Chicken Broth 1 tablespoon of butter
Place above ingredients in foil pouch tent the foil to allow to steam Make sure you seal edges Bake at 350 degrees in the oven for 25 to 30 minutes
