Robbie Shoults with Bear Creek Smokehouse shares a family recipe for "MeMaw's Potato Soup" today.
Creamy Potato soup
4 cups raw potatoes, peeled and diced
1 1/2 cups water
1/2 cup chopped celery
1/2 cup chopped onions
1 tablespoon chicken bouillon granules
1 cup milk
12 ounces sour cream
2 tablespoons flour
2 teaspoons chives, fresh or freeze dried
salt and pepper, to taste
In a large saucepan, place potatoes in water. Add celery, onions and bouillon. Simmer for 20 minutes. Add milk. Mix flour with sour cream, stirring until smooth. Add to soup while stirring. Simmer, stirring constantly until slightly thickened. Stir in chives. Taste for seasoning.
