Apple Bread

Recipe from Rebecca Morgan of Ill.

2-3 c.chopped apples
2 c. sugar
2 c. flour
3 eggs
2 tsp. baking powder
1 1/4 c. salad oil
1/2 tsp salt
1 tsp. cinnamon
1 c. nuts
1 c. raisins.

Mix eggs, sugar, and oil, add flour, salt, cinnamon, and baking powder. Mix well. Add nuts, raisins and apples. Spray loaf pans with non-stick cooking spray ( such as Bakers Joy), preheat oven to 350.  Bake loaves for1 hour and15 minutes. Check for doneness by sticking a  toothpick in the middle; bake additional 5 mins, if necessary. Cool on wire rack, flip over to release from pan. Serve with whipped topping, if desired.
