G Texas Custom Catering Shrimp Ceviche:
1 pound medium-small shrimp, peeled and deveined (Slightly Boiled)
2 Tbsp salt
3/4 cup lime juice (juice from 4-6 limes)
3/4 cup lemon juice (juice from 2-3 lemons)
I cup finely chopped red onion
1 cup Chopped Cilantro
2 Chopped Jalapenos
32 ounces Tomato Juice
Mix ingredients together and serve chilled.
Great as appetizers or "tastes".
