Salmon with pecan crunch topping

Recipe from Rebekah Saucier of of Lafayette, La.

Total Time:  15 min

4 (6 oz) salmon fillets salt and pepper
2 Tablespoons dijon mustard
2 Tablespoons butter, softened
1 1/2 Tablespoons honey
1/4 cup Panko or other breadcrumbs
1/4 cup chopped pecans
2 teaspoons chopped fresh parsley

1.  Sprinkle salmon with salt and pepper. Place fillets, skin side down, in a lightly greased baking dish.

2.  Combine mustard, butter and honey and brush on fillets.

3.  Combine bread crumbs, pecans and parsley and spoon mixture evenly on top of each fillet. Bake at 450 degrees for 10 minutes or until fish flakes easily. Goes great with a light romaine salad!
