Junior League's Breakfast Cookies

The Junior League of Tyler will host its Kids in the Kitchen event at 3-N-1 Trinity Services' location at 918-A North Englewood, Tyler, Texas 75702.  The event will take place on April 29, 2008 at 5:30pm-6:30pm.

Some of the activities will include: lessons on the food pyramid and how to make healthy food choices.  The children will have hands on involvement in preparing healthy snacks.  They will also take home goodie bags filled with healthy snacks, recipes, toothbrushes, toothpaste, dental floss and much more!

This recipe is featured in the "Ring Around the Rosie - A Collection of Children's Recipes" by The Junior League of Tyler.

Ingredients:

1/2 cup (1 stick) butter, softened

1/2 cup sugar

1 egg

2 tablespoons frozen orange juice concentrate, thawed

1 tablespoon grated orange zest

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1/2 cup Grape Nuts cereal

 

Directions:

Combine the butter, sugar, egg, orange juice concentrate and orange zest in a mixing bowl and beat until light and fluffy.  Add the flour and baking powder and beat until blended.  Stir in the cereal.  Drop by teaspoonfuls 2 inches apart onto an ungreased cookie sheet.  Bake at 350 degrees for 10-12 minutes or until golden brown.  Remove to a wire rack to cool completely.

Yield:  24 cookies

    During a Monday night special meeting, Nacogdoches Independent School District named Sandra Dowdy the lone finalist for the superintendent position. Dowdy has served as interim for the last several months. Per a press release from NISD, Dowdy was selected from a field of 45 applicants.
