
Grant's Mother's Day Omelet:
Leftover Steak
Half an Onion
Small Package of Mushrooms
Half of a Green Bell Pepper
Half of a Tomato.
3 eggs
Mixed cheese
Take leftover grilled steak and dice into small cubes. Place in a skillet with diced tomatoes, onions, green bell peppers, and sliced mushrooms with a table spoon of butter and a half tablespoon of seasoning salt. Sauté until the onions and peppers are soft.
While sautéing, beat three eggs until smooth with a "splash" of water, very little. Once the meat and vegetables are done, add the egg mix. Cook on medium heat for about 3 minutes. Then place skillet into a pre heated oven set to broil. This will take about a minute to cook the top of the omelet. Do not overcook! Take out and place mix cheese over the omelet. Place back in the oven for 30 sec, take out, flip over to make the omelet shape and enjoy.
