Dudley's Cajun Restaurant's Crawfish Fettucini

Dudley's Crawfish Fetucini


2 teaspoons of seasoning mix (See below)
1 stick of butter
1 cup chopped yellow onion
4 minced cloves garlic
1/2 cup chopped celery
1 pound crawfish tales (peeled)
1-10 ounce can of cream of mushroom soup
1-8 ounce carton of sour cream
8 ounces of Velveeta cheese
1-8 ounce package of fettuccini, boiled and drained
Grated parmesan cheese

Melt butter in a large pot and saute' onions, celery and garlic for five minutes or until tender.

Add crawfish, soup, sour cream, Velveeta cheese and 2 teaspoons of the seasoning mix.  Simmer until bubbly.

Add cooked noodles, mixing well.  Pour the mixture into a 2 quart casserole dish.  Top with grated parmesan cheese and bake, uncovered, at 350 degrees until heated through.  (About 25 minutes)

Seasoning Mix:

1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon fine ground black pepper
