SNICKERDOODLES (makes about 3 dozen cookies)
1 c butter, softened
1 ¾ c sugar
2 ¼ c flour
2 tsp cream of tartar
1 tsp baking soda
½ tsp salt
Beat together butter & 1½ c sugar until creamy. (reserve ¼ c sugar) Add eggs and beat until smooth. In a separate bowl, combine flour, cream of tartar, soda, and salt. Add this mixture to butter mixture. Mix together cinnamon and remaining sugar. Roll dough into balls and then roll in cinnamon-sugar mixture, coating completely.
Place balls on parchment-lined baking sheet, about 3 inches apart. Bake at 400° for 10 minutes.
