1. Begin with chocolate cake of your choice
2. Fill or top with very hard ice cream, sorbet, or gelato
3. Spread each cake with meringue
4. Bake on top rack at 500 degrees until meringue is toasted and light brown, about 2 minutes
In a 4 ½ quart bowl beat, with an electric mixer, 6 egg white at med-high speed until soft peaks form. Gradually add 1 cup granulated sugar, while beating on high. Meringue should have stiff peaks and be glossy.
