Hot Feta Artichoke Dip

Serves 6-8
Prep time: 10 minutes

Ingredients:

1 14 oz. can artichoke hearts, drained and chopped
1 8 oz. pkg. feta cheese, crumbled
1 cup low fat mayonnaise ½ cup parmesan cheese, shredded
1 (2 oz) jar diced pimentos, drained (optional)
1-2 clove garlic, minced

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together.
  3. Spoon into 9-inch pie place or 3-cup shallow baking dish.
  4. Bake for 20-25 min or until lightly browned and bubbling.

Note: You can make the night before, cover and refrigerate, but bake it for 30-35 minutes instead.
