(KLTV/KTRE) - Do you need a few new, simple recipe ideas for back-to-school? Whether you need ideas for after-school snacks, lunch box treats, or an easy breakfast or supper during the busy week, Mama Steph has got you covered!

No-Bake Chocolate Peanut Butter Bars

1/2 cup butter

1/2 cup packed brown sugar (light or dark)

1 teaspoon vanilla extract

2 cups peanut butter (I used smooth)

2- 1/2 cups powdered sugar

2 cups semisweet chocolate chips

A couple of handfuls of small pretzels

Place all ingredients except the chocolate chips in a large microwave safe bowl. Microwave until butter and peanut butter are melted, one to two minutes (time will vary by microwave).

Remove from microwave and use a large spoon to stir all of the ingredients together until they form a ball of dough that leaves the side of the bowl. Pat into a 9×13 pan.

Pour chocolate chips into another microwave safe bowl and microwave at 30 second intervals, stirring after each, until completely melted. Spoon over top of peanut butter mixture and spread evenly. Top with small pretzels, and press in gently so they'll adhere as the chocolate hardens.

Allow to cool completely at room temperature until chocolate hardens again or place in the refrigerator for faster hardening. Cut into squares and serve. Enjoy!

Fun treat: PB&J "tacos" with fruit


slices of white bread Peanut butter or favorite nut butter Squeeze bottle of jam or jelly Small berries and or banana chunks honey or syrup for drizzling

Method: Using a large glass, cut a circle out of a piece of bread. Spread it from corner to corner with peanut butter, and add a squiggle of jam or jelly. Make a line of fruit down the center, fold over, and drizzle with honey. Have fun letting the kids make their own!

Taco Pizza

1 tube pizza dough 1 can refried beans 1 small can chopped green chilies small jar of salsa Grated Mexican blend cheese Pound of ground beef or turkey taco seasoning Toppings: shredded lettuce, chopped tomatoes, sour cream, etc.

1. Preheat oven according to your pizza crust directions.Spread the crust out on a rectangular baking sheet, and prebake for 10 minutes. 2. Brown the ground meat in a skillet with the taco seasoning, crumbling as it browns.

3. Spread the crust with the refried beans (as if it is the pizza sauce.) Top with the meat, then the cheese.

4. Bake for another 10 minutes, until crust is golden brown. 5. Allow to cool out of oven for 5-10 minutes, then top with lettuce, tomato, and sour cream.

Easy blueberry-cinnamon crockpot oatmeal

Unsalted butter, for greasing 3 cups whole milk 2 cups water 2 cups old-fashioned oats 1/4 cups brown sugar 2 tablespoons maple syrup, plus more for serving 2 teaspoons vanilla extract 2 teaspoons cinnamon 1/4 teaspoon kosher salt 1 cup frozen blueberries

Method: Butter or spray inside of crock. Add all ingredients except the berries. Cook, stirring occasionally, four hours on high or eight hours on low power. Ten minutes before ready to eat, add in the frozen berries. Allow to heat in the oatmeal for about ten minutes.

Top with more maple syrup and enjoy!
